Meet Chef Wade W. Simpson.
Wade was born in Denver; at age six his family relocated to the Phoenix area. Growing up in the
Valley of the Sun, he considers himself a native. At age 13, Wade began his career washing
dishes in a small local, downtown kitchen. He worked his teenage years through various roles
within the food and beverage industry. Wade noticed the organized chaos, comradery, and
busyiness present in the overall dynamic of a kitchen; he anxiously wanted to be a part of a
team, while utilizing his talents and sharing his passion.
Once given the opportunity to work ‘on the line,’ Wade thrived in his newfound beginnings. He
naturally embraced his intrigue for back-of-the-house restaurant operations, the kitchen clique,
and the entire food experience for the consumer. Discovering he wanted to make a career out of

Upon graduation in 1985, Wade spent the next nine years working in various hotels across the
country: Doubletree Hotels, Westin, Sheraton Grande, Ritz Carlton, The Inn & Links of Spanish
Bay, and Caneel Bay Resort in the USVI. Wade returned to Phoenix in 1994 to the Pointe
Resorts, where he expanded his creative flair with the innovation of 'The Brew Masters' multi-
course dinner, made and paired with Micro-brewed beers.
From 2003 to 2014, Wade continued his dynamic career joining the well-respected Paradise
Valley Country Club. Here he cultivated a very successful operation at this exclusive private club.
Also, he worked on sharpening his food concepts [and his knives], studying human behaviors as
they relate to food and honing his identity as a Chef.
Today, Chef Wade is owner and operator of Bistro on Wheels; launching Chef Wade's Mac-N-
Cheese [on wheels] in January 2018. Wade brings his unique and refined style to the streets.
He also delivers unique dining experiences for company events and private parties. Some of Chef's
favorites are Truffle & Mushroom Mac-n-Cheese, Duck Confit Sliders with Red Cabbage Apple
